Leprechaun Limeade

It’s finally St Patrick’s Day! This is one of our favorite times of year, not just because of the holiday, but because it finally starts to feel like spring! The weather may be a little unpredictable here, but if unpredictable means we get some sunshine occasionally, I’ll take it. Whether you’re out watching on the green Chicago River or cooking corned beef at home, this Leprechaun Limeade is perfect this St Patrick’s Day!

On those warm days, there’s nothing more refreshing than a lemonade. But seeing as it’s March, a limeade seems more appropriate. The color from the mint, lime, and Minty Fresh give this drink a super cute green color (plus it’s much lighter than green beer). This sweet and tart minty limeade is perfectly refreshing on it’s own, but we wouldn’t tell if you added a couple shots of your liquor of choice. ? 

Leprechaun Limeade

Ingredients
  

  • 1 cup freshly squeezed lime juice about 8-10 limes
  • 1 cup granulated sugar or equivalent sweetener of choice.
  • 4 cups Minty Fresh
  • Ice
  • Lime slices and mint leaves for garnish optional

Instructions
 

  • Brew a large batch of Minty Fresh, at least 4 cups (plus whatever you want to drink).
  • In a medium saucepan, combine sweetener and 1 cup of Minty Fresh over medium heat, stirring occasionally, until the sweetener dissolves completely. Remove from heat and allow the mixture to cool.
  • In a large pitcher, combine lime juice, remaining 3 cups of Minty Fresh, and the cooled sugar syrup. Stir well to combine.
  • Taste the limeade and adjust the sweetness by adding more sweetener or lime juice as needed.
  • Add ice to the pitcher to chill the limeade, or serve the limeade over ice in individual glasses.
  • Garnish with lime slices and mint leaves if desired. Enjoy!

Notes

Optional:
  • For a cocktail version, add 1-2 shots of a liquor of your choice and shake or stir to incorporate.
  • Top with sparkling water (or wine, no judgement here…) for a bubbly twist.
  • Add a drop or two of green food color to the batch to boost the color – just don’t go crazy and turn your teeth green.
